1 lb. butter=2 c.
2 c. sugar-=1 lb.
2 1/2 c. packed brown sugar=1 lb.
1 1/3 c. packed brown sugar-1 c. granulated sugar
3 1/2 c. powdered sugar=1 lb.
4 c. sifted flour=1 lb.
4 1/2 c. cake flour sifted=1 lb.
1 oz. bitter chocolate=1 square
4 T. cocoa plug 2 tsp. butter=1 oz. bitter chocolate
1 c. egg whites=8 to 10 whites
1 c. egg yolks=12 to 14 yolks
16 large marshmallows=1/4 lb.
1 large marshmallow=10 miniature marshallows
1 c. miniature marshamallows=100 miniature or 10 large marshamallows
1 T. cornstarch=2 T. flour for thickening
1 T. vinegar or lemon juice plus 1 c. milk-1 c. sour milk
1 lemon=3 to 4 T. juice
1 orange=6 to 8 T. juice
1 c. granulated sugar plus 2 T. cornstarch=powdered sugar, blended in blender to powdered sugar consistency
