“Chocolate Cream Cookies”

1 3/4 c. flour
1/2 c. cocoa
1 tsp. soda
1 tsp. salt
1 c. sugar
1/2 c. vegetable oil
2 eggs
vanilla
(pecans and marshmallows as described in recipe)

Cream the sugar, oil, eggs, and vanilla. Sift dry ingredients and add to creamed mixture. Make into small balls and press half pecan in the top of each. Bake 7 minutes at 350. Remove from oven and put half a marshmallow, cut side down, on each. Bake 3 minutes more. Ice while warm.

“Black Eyed Peas”

4 strips of bacon, diced
1/2 c. chopped onion
2 c. black eye peas
1/2 c. uncooked rice
2 c. water
1/4 tsp. dried red pepper flakes
1/4 tsp. salt
pinch of garlic

Cook the bacon and onions together, until the bacon is crisp and the onion is tender. Add the black eyed peas, rice, water, red pepper flakes, salt, and garlic. Cover and simmer for 20 to 25 minutes.

“Cheese Ball”

2, 8 oz. pkg cream cheese, softened
put in 1 pkg dry ranch dressing mix (she used the Fiesta brand)
1 c. shredded cheese (she used cheddar)
1 c. bacon bits (she used 1/2 c.)

Mix and form into a ball.

“Reindeer Fodder”

All of these are 12 oz. boxes: of Trix, Kix, Captain Crunch and Rice Krispies.
8 oz. can mixed nuts
1 c. coconut (optional)
1 pkg, plus 3 squares of Almond bark

Melt the almond bark and pour over all the ingredients. Stir well. Store in a plastic container.

“Pot Pie”

1 lb. hamburger (very lean)
1/2 c. milk
1 envelope Lipton onion soup mix
pie crust
frozen hash browns

Mix together. Press the hamburger mixture in the bottom of unbaked pie crust. Place a layer of frozen hash brown potatoes on top. Top with the crust and seal. Bake at 350 for one hour.
