“Blackened Halibut” (used Cod last week)

2 T. garlic powder
1 T. salt
1 T. onion powder
1 T. dried oregano
1 T. dried thyme
1 T. pepper
2 1/2 T. paprika
(Optional) 1 T. cayenne pepper
4 halibut fillets
2 T. butter

In a large shallow dish combine the first 7 (or 8 if cayenne pepper) ingredients. Add fillets, turn and coat. In a large skillet, cook fillets in butter over medium heat until fish flakes easily with a fork; 3-4 minutes on each side.

1 c. sweet or sour cream
1/2 c. vinegar
1/2 c. sugar
1 egg beaten
1 T. flour

Mix flour and sugar. Add vinegar, cream and eggs. Cook until thick. Makes 1 pint.

“Mayonnaise”

1 egg
2 T. sugar
1 tsp. dry mustard
1/4 c. vinegar
3/4 c. salad oil
1 1/2 tsp. salt
1/8 tsp. pepper

Put all in a mixing bowl. Do not stir. Cook the following until thick:
1 c. water
1/4 c. cornstarch
Add to the mixture in the bowl and beat until smooth. Makes 1 pint.

“Mayonnaise Rolls”

1 c. flour
1 1/4 tsp. baking powder
1/2 c. milk
1/4 c. mayonnaise or salad dressing

Mix well and pour into greased muffin tins. Bake at 400 degrees for 20 minutes. Makes 6 large or 12 small rolls.
