“Chocolate Lasagna”

(crust)
1 package Oreos crushed (36)
5 T butter melted

(Cream cheese layer)
2 packages cream cheese (8 oz) softened
1 c. Powdered sugar
1 cup Cool Whip (big carton)
1 tsp vanilla

(pudding)
2 packages instant chocolate pudding (3 oz)
3 cups milk

(topping)
Cool Whip
top with mini chocolate chips

Crust: Melt butter and Oreo crumbs. Press into 9 by 13 baking dish.
Cream cheese layer: beat cream cheese until fluffy. Add powdered sugar until light and smooth. Add vanilla and Cool Whip. Spread on crust.
Pudding layer: whisk pudding and milk until smooth. Pour over cream cheese. Top with rest of Cool Whip. Sprinkle with mini chocolate chips. Chill 3 to 4 hours.

You can also make it Lemon Lasagna by substituting lemon Oreos and lemon instant pudding. Doesn’t add mini chocolate chips to it.

“Five Cup Salad”

1 c. crushed pineapple, drained
1 c. marshmallows
1 c. coconut
1 c. mandarin oranges, drained
1 c. sour cream

Mix together and let stand in refrigerator overnight or several hours.

“Glorified Rice”

1 c. rice cooked and cooled
2 bananas sliced thin
1 large can pineapple tidbits, drained
2 c. Cool Whip

Mix together and fold in Cool Whip. Chill for 2-3 hours.

“Country Vanilla Ice Cream”

4 eggs
2 1/4 c. sugar
5 c. milk
4 c. half of half (or heavy cream)
4 1/2 tsp. vanilla
1/2 tsp. salt

Beat the eggs with a mixer and gradually add sugar to beaten eggs until mixture is very stiff. Add remaining ingredients and mix thoroughly. Pour into a gallon freezer and freeze as directed.

6-8 eggs, depending on size
2 1/2 c. sugar
1 quart of milk
Cook this, stirring constantly until thickens. Cool it.
then add:
1 tsp. vanilla
1/4 tsp. salt
enough cold milk to fill the bucket in your freezer (usually uses whole milk, but have used 2%)

“Homemade Ice Cream”

1 large vanilla pudding, cook and serve
2 c. sugar
4 whole eggs
a dash of salt
1 quart of whole milk
2 T. pure vanilla

Beat together the pudding, sugar, eggs, salt, and milk. Cook until it gets a little thick, then cool it. Then, add the vanilla. Put in the freezer container and add 1 can evaporated milk and enough whole milk to get to the freeze line. Freeze it.
