“Slow Cooker Beef and Broccoli”

1 to 1 1/2 lbs. boneless beef chuck roast or flank steak thinly sliced across the grain (we found stir fry meat)
1/8 tsp. sea salt or to taste
1/4 tsp. black pepper or to taste
1/2 tsp. sesame oil
3 1/2 c. broccoli florets
added slice water chestnuts

(for the sauce)
1/3 c. low sodium soy sauce
1 c. low sodium beef broth
2 T. oyster sauce
2-3 T. honey
1 tsp. sesame oil
2 cloves garlic minced
1/2 tsp. minced or grated fresh ginger
1/4 tsp. red pepper chili flake (used chili powder)

(cornstarch slurry)
2 1/2 T. cornstarch
3 T. water

Season beef with salt, black pepper, and 1/2 tsp. sesame oil. Combine the beef broth, soy sauce, oyster sauce, honey, 1 tsp. sesame oil, ginger and chili flakes in the insert of a 5-6 quart slow cooker. Add the beef and coat with sauce. Cover and cook on high for 45 minutes–2 hours on low for 1 1/2 to 3 hours, depending on your slow cooker heating levels. Meanwhile, place broccoli in a microwave-safe bowl with 1/4 c. water. Microwave 2-3 minutes until broccoli is tender. Once the beef is done (or about 30 minutes before serving), whisk together the cornstarch and water to create a slurry in a small bowl. Stir into the slow cooker along with the steamed broccoli florets and chesnuts. Cover and allow to cook on high until sauce has thickened (about 20 minutes). Adjust seasonings and sprinkle with sesame seeds, green onions. Serve hot with your favorite side–rice, noodles, etc.

“Banana Cake (using a cake mix)”

1 yellow cake mix (mix it according to package)
add, 1 tsp. baking soda, 1 tsp. vanilla, and 2 or 3 ripe bananas mashed
bake in a 9 by 13 pan like any cake mix 25-30 minutes (keep checking)
usual add a little carmel icing

“Shrimp Scampi”

1 lb. raw shrimp, peeled and deveined
2 tsp. chopped fresh garlic
3 oz. white wine (dry)
1 tsp. Italian seasoning
2 T. olive oil
1/4 lb. or 1 stick real butter, cubed

Saute garlic in olive oil. Add shrimp and cook until opaque. Remove shrimp from heat and keep warm. Add Italian seasoning. Add wine to the pan and simmer until liquid is reduced by half. Remove from heat. Add butter and whisk vigorously. Add cooked shrimp and serve over pasta. Can also top with fresh parmesan. Another option; pour olive oil over pasta and toss, then serve.

TIP, cooking a steak cave man style….place the steak right on the coal. Season the steak and place on the hot coals. 2-3 minutes for medium.
