“Brookies”

Cookie Layer
1 pouch (17.5 oz) Betty Crocker™ Chocolate Chip Cookie Mix
4 tablespoons butter or margarine, softened
1 tablespoon water
1 egg

Brownie Layer
1 box (18.3 oz) Betty Crocker™ Fudge Brownie Mix
1/4 cup water
2/3 cup vegetable oil
2 eggs

Heat oven to 350°F. Line 13×9-inch pan with foil. Spray with cooking spray. In medium bowl, stir Cookie Layer ingredients until soft dough forms. Press mixture evenly in bottom of pan. In medium bowl, stir Brownie Layer ingredients until well blended. Spread on top of cookie layer in pan. Bake 33 to 38 minutes or until brownies are set around edges and toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pan on cooling rack, about 1 hour. Remove from pan; pull away foil. Cut into 5 rows by 4 rows.

Garlic Butter Steak Bites wrote down ingredients, but not finding any butter in the recipe. After marinated, do you fry in butter??

“Zucchini Oatmeal Cookies”

1 1/4 c. flour
1 tsp. soda
1/2 tsp. salt
1/2 tsp. baking powder
3/4 c. shortening or 1 stick oleo plus 1/4 c. vegetable oil
1 c. white sugar
1 c. brown sugar
3/4 c. zucchini
2 eggs
2 c. rolled oats
1 tsp. vanilla
6 oz. pkg. chocolate chips

Cream shortening with sugars, add eggs, vanilla, and zucchini. Stir in dry ingredients and oats, adding chips after mixing well. Drop by teaspoon on to cookie sheet and bake at 350 for 12 minutes.

listener from Macon experimented with sweet corn….squeezable Parkay butter, put minced garlic into the butter, shook it up and spread over the corn. Added parmesan cheese and wrapped it in foil. Place in pellet grill for 20 minutes at 225.

“Zucchini Rice Bake”

1 c. dry rice (will be cooked should equal 2 c.)
1 c. chicken broth
4-5 c. coarsely chopped zucchini
1 egg, beaten
1 c. sharp cheddar cheese
1/2 c. onion, minced
1/2 clove garlic, minced
1/2 tsp. salt

Put your chicken broth into cooked rice. Add all the other ingredients and mix well. Put in an 8 by 8 greased dish. Bake at 350 for 30-to-45 minutes. Sprinkle with paprika when it comes out of the oven. (original recipe called for zucchini to be parboiled, but if fresh and tender, you don’t have to do so)
