“Grilled Chicken”

1 c. orange juice
1 tsp. garlic powder
1/2 c. chopped cilantro
2 T. soy sauce
1 tsp. chili powder
salt and pepper to taste
4 boneless, skinless chicken breasts
flour tortillas (optional)

In a large bowl, mix orange juice, garlic powder, cilantro, soy sauce, chili powder, salt and pepper. Place chicken inside a large zip-top bag and pour marinade into bag. Let the chicken marinate in the refrigerator for 1 to 24 hours…the longer the better. Prepare barbeque grill. When it’s hot, grill chicken breasts until they are no longer pink on the inside. Watch closely, as chicken breasts cook quickly. Chicken can be served whole or cut up and wrapped in tortillas.

“Barbeque Chicken”

3 whole chickens (cut in halves)
1/2 c. Italian salad dressing
1/4 c. oil
5 T. vinegar
2 T. Worcestershire sauce
1 T. salt
1 tsp. pepper
2 T. lemon juice
4 T. butter

Marinate chicken halves for 2 hours in above ingredients. Place on smoker; put drained liquid in bottom of pan. Hickory chips or crab apple sticks may be added to coals. Cook for 5 hours.

“Glazed Beer Can Chicken”

1 or more (3 to 4 lb.) whole chickens
1 can or beer per chicken
Lawry’s seasoning salt
horseradish jelly (orange marmalade and horseradish) for glazing

Season chicken the night before cooking with Lawry’s and store in the refrigerator until ready for grilling. When the grill is ready, place opened beer can on grill. Place chicken on the beer can. Close grill and cook at 250 for approximately 2 to 3 hours or until the bird reaches 185 in the center. Glaze chicken after the first hour. When chicken is done, remove from grill, throw away remaining beer and cut up chicken to serve. Glaze again if desired.

1 regular box lime jello
1 c. boiling water
1 small can of crushed pineapple
1 small container of thawed Cool Whip (8 oz)
1 small container of cottage cheese
1 c. mini marshmallows

Mix the first 3 ingredients in a large bowl and place in the refrigerator to set. After it is set, add the rest of the ingredients and stir.
