grandmother always used a food grinder and used American cheese, pimentos, pickle relish, and Miracle Whip for her pimento cheese. Add a pinch of sugar to make it better.

“Pimento and Cheese Spread”
3 inch chunk American cheese
let set at room temperature and then mash
Add:
1/2 jar diced pimento
12 diced olives
4 T. Miracle Whip
mix well

“Pimento Cheese”
3 beaten eggs
3/4 c. sugar
2/3 c. vinegar
1 large jar pimentos
1 1/2 T. flour
1/2 c. cream or Half and Half
2 lbs. diced Velveeta cheese, at room temperature
Bring all, except cheese and pimentos, to a boil over low heat until thick. Pour over the diced cheese. Add the pimentos. Beat with electric mixer until smooth. Store in the refrigerator.

1/4 tsp. salt
1/4 c. vinegar
1/4 c. sugar
1/4 c. canned milk or fresh cream
1/2 tsp. celery salt
1/2 tsp. prepared mustard
1 lb. Velveeta cheese, diced
small jar pimentos, diced
Mix all ingredients except cheese and pimentos in a sauce pan. Simmer until consistency or mayonnaise. Add the cheeses and pimentos.

“Easter Pineapple Bake”
2 c. sugar
29 oz. can crushed pineapple, drained
1/2 c. melted oleo
2 tsp. cornstarch
8 slices toasted bread, cubed
Combine sugar, cornstarch, and juice from pineapple. Toss bread with oleo and mix all ingredients together with pineapple. Bake in buttered 8 inch square pan at 350 for 30 minutes.

“Upside Down Pineapple Ham Loaf”
7 c. ground chopped ham
1 lb. veal shoulder
1 lb. beef round ground
4 c. day old bread crumbs
1/2 tsp. poultry seasoning
1 tsp. salt
1/2 tsp. pepper
2 eggs
1/2 c. tomato catsup
4 medium celery stalks, chopped fine
1/2 c. chopped parsley
5 slices pineapple
maraschino cherries
brown sugar
Grind veal. Combine all ingredients except pineapple, cherries, and brown sugar, in a mixing bowl. Sprinkle brown sugar in bottom of 10″ angel food cake pan. Arrange cherries and pineapple on top of brown sugar. Press meat mixture around pineapple and pack remaining on top. Bake at 350 for 1 1/2 hours. When done, pour off drippings and save. Place meat on platter pineapple side up. Spoon drippings on top. Serves 12 to 16.
