“Hearty Bacon Potato Chowder”

8 slices of bacon
6 medium potatoes, cubed
onion
1 c. sour cream
1 can chicken broth
1/2 pkg. 8 oz. cream cheese
1 1/4 c. milk
1 can cream of chicken soup
8 oz. corn, drained
1/4 tsp. pepper
1/4 tsp. thyme

In a medium pan, cook bacon until crisp. Add potatoes and onions. Add broth as needed. Cook and stir until cooked. Add remaining ingredients. Continue to cook until blended.

“Weight Watchers Cherry Cheesecake”

2/3 c. cottage cheese
1 T. grated lemon rind
2 eggs, separated
1/3 c. instant non-fat dry milk
artificial sweetener equaling 6 T. sugar
1/2 tsp. vanilla
1/2 c. evaporated skim milk
Combine cheese, sweetener, lemon rind, vanilla, egg yolks, milk, and milk powder in blender. Blend 1 minute. Transfer to a bowl and fold in beaten egg whites. Pour in springform pan and bake 40 minutes at 350.
(topping)
1 c. sweet cherries pitted (can be fresh)
1/4 c. cherry flavored diet beverage
artificial sweetener to taste
1/4 tsp. cherry extract
In a covered sauce pan cook cherries in the beverage until liquid evaporates. Add sweetener and extract and spread over baked cheesecake. Return to oven for 5 minutes.

“Diabetic Ice Cream”

2 eggs beaten
1 1/2-2 c. milk or canned milk

Sweeten to taste and freeze in tray. Beat and refreeze.

“Diabetic Ice Cream”

1 envelope Sweet and Low Vanilla Custard Mix
3/4 c. milk
2 1/2 tsp. sweetener
vanilla to taste
fruit
2 beaten eggs
small carton frozen Coffee Rich
pinch of salt

Cook custard mix according to directions on box. Add milk and eggs while still on stove. Remove from heat and add other ingredients. (3 mashed bananas suggested fruit) Can use ice cream freezer or freeze in freezer compartment of refrigerator stirring often. Make about 1/2 gallon.

“Goulash”

1 lb. hamburger
1 diced onion chopped fine
1 1/2-2 c. cooked macaroni
1 pt. tomatoes mashed
2 T. sugar

Brown hamburger and onion together with salt and pepper to taste. Drain off fat. Add cooked macaroni, tomatoes and sugar. Cook 10-15 minutes.
