“Cowboy Cookies”

1 c. butter
1/2 c. granulated sugar
1 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 c. quick oats (uses old fashioned)
1 c. coconut flakes
12 oz. chocolate chips (semi-sweet)
can add nuts if you like

Cream your butter and sugars together. Add your 2 eggs and vanilla and beat well. Combine your flour, baking soda, and salt and mix into creamed mixture, well. Stir in your oats, coconut, and chocolate chips. Drop by spoonfuls on a greased cookie sheet. Cook at 350 for 12-15 minutes.

“Peanut Butter Sheet Cake”

Mix together in a large bowl
2 c. sugar
1 tsp. baking soda
2 c. flour
1 tsp. salt
Combine in a sauce pan and boil
2 sticks of butter
1 c. water
1 c. peanut butter
Pour over mixture and stir
Combine 1/2 c. milk, 1 tsp. vanilla, and 2 eggs. Mix into flour and peanut butter mix. Pour batter into sheet cake pan. Bake 12-15 minutes at 350.
Make icing when cake is about done
1 stick butter
1/2 c. peanut butter
1/2 c. plus 2 T. milk
Pour over 4 to 4 1/2 c. powdered sugar. Beat until spreading consistency. Spread over warm cake.

USING A MICROWAVE SAFE BOWL, SPRAY NON-STICK SPRAY. BEAT EGGS WITH A LITTLE MILK AND SEASONING AND PUT IN THE MICROWAVE FOR ABOUT A MINUTE. TAKE OUT AND BEAT THEM. PLACE BACK IN THE MICROWAVE UNTIL YOU GET THE CONSISTENCY YOU WANT.
-DON’T ADD ANY SALT UNTIL DONE WITH THEM. DON’T OVER STIR THE EGGS.

“Cherry Dessert”

Grease an 8 inch square pan. Add 1 tsp. lemon juice to 1 can of cherry pie filling. Pour into pan. Place a can of 10 biscuits on top. Mix together 1/4 c. brown sugar, 1/4 c. white sugar, and 1 T. cinnamon. Sprinkle over the biscuits. Melt 2 T. oleo and pour over the top. Bake at 350 for 25-30 minutes. (it’s good warm, with ice cream)

“Cherries Cherry Crunch”

1/2 c. butter
1 lb. (5 oz.) can cherry pie filling
1 pkg. yellow cake mix
1/2 c. chopped walnuts

Cut butter into cake mix. Mix until resembles coarse corn meal. Reserve 1 cup. Pat remaining in ungreased 9 by 13 pan. Build up edges 1/2 inch. Spread pie filling to 1/2 inch edge. Mix walnuts with reserved mixture and sprinkle over the top and bake at 350 for 45-50 minutes. Serve warm with ice cream or whip cream.
