“Crazy Mint Squares”

1/2 c. oleo
1/2 c. powdered sugar
1 tsp. vanilla
1/2 c. cocoa
1 egg
2 c. graham cracker crumbs
Heat and blend oleo and cocoa. Add other ingredients and mix well. Press in 9 by 13 pan. Beat:
1/2 c. melted oleo
3 c. powdered sugar
1/3 c. cream de menthe (green)
Spread on crust and chill one hour. Melt:
1/4 c. oleo
1 1/2 c. chocolate chips
Spread on mint layer and chill one to two hours.

“Caramel Heavenlies”

12 graham crackers (double)
3/4 c. margarine
1 tsp. cinnamon
1 c. chopped nuts
2 1/2 c. marshmallows (miniature)
3/4 c. brown sugar
1 tsp. vanilla
2 c. flake coconut

Preheat oven to 350. Arrange crackers in single layer in 15 1/2 by 10 1/2 jelly roll pan. Sprinkle with marshmallows. In a saucepan, combine margarine, brown sugar, and cinnamon. Cook over medium heat, stirring constantly until sugar is dissolved. Remove from heat. Stir in vanilla. Spoon mixture evenly over marshmallows. Sprinkle with nuts and coconut. Bake 12-14 minutes until lightly brown. Cool in pan.
To store, refrigerate in an air tight container up to two weeks.

“Ohio State Buckeyes”

1 lb. butter
2 c. peanut butter
2 1/2 or 3 lb. powdered sugar
1/8 lb. paraffin
1 T. vanilla
6 oz. pkg. semi-sweet chocolate chips

Cream butter and peanut butter. Add sugar and vanilla. Mix thoroughly and make into balls the size of walnuts. Melt paraffin and chocolate chips in double boiler. Dip balls into paraffin and chocolate mixture with tooth picks.

-QUESTION, Eagle Brand fudge, to they cook to a soft ball stage or how long do you cook.

“Fantasy Fudge”

18 oz. chocolate chips
1 can sweetened condensed milk
1 1/2 tsp. vanilla
dash of salt
1 c. chopped nuts (optional)

Melt chocolate chips in the microwave 2-3 minutes stirring every 30 seconds. Add condensed milk. Stir well. Add the vanilla and salt. Add nuts. Pour into a 7 by 11 or 8 by 8 pan that has been sprayed or lined with parchment paper. Chill for 2 hours.

“Quick and Easy Candy”

2 c. sugar
24 saltine crackers, crumbled
2/3 c. milk
6 T. peanut butter

Combine sugar and milk in saucepan. Boil for 4 minutes. Stir in cracker crumbs and peanut butter. Drop by spoonfuls onto waxed paper. Cool until firm.

-TIP, regarding dark and light syrup in pecan pie…..
Caller likes the white syrup with white sugar…..a lot of recipe calls for 2 T. of melted butter, she uses 4 T.

-TIP, cooking biscuits, try an the air fryer….a friend did for 7 minutes, next time he’ll do 8 minutes and turned out great
