“Bread Pudding”

Bread
2 c. toasted bread, broken into pieces
1 c. sugar
3 eggs
1/4 tsp. salt (optional)
2 1/2 c. milk
raisins, cinnamon, and vanilla
Mix together. Bake at 350 until knife inserted in the center comes out clean
Topping
1 c. boiling water
1/2 c. sugar
1-1 1/2 T. cornstarch
vanilla
lemon
To 1 c. boiling water, add 1/2 c. sugar and 1 to 1 1/2 T. cornstarch. Cook until thick. Add vanilla and lemon

“Bread Pudding”

6 c. torn bread, day old, about 10 slices (likes sourdough)
2 T. butter
2/3 c. sugar
1 1/2 c. golden raisins
3 c. milk, or, 1 can evaporated milk enough water to make 3 c.
2 beaten eggs
1/4 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla

Put your bread in a sprayed 9 inch pan. Heat the butter, sugar, raisins and milk in a microwave until just warm and butter melted and stir well. Mix in the beaten eggs. Add salt, cinnamon and vanilla and stir well. Pour over torn bread. Let is sit 10 to 15 minutes. Bake at 350 for 45 minutes. Before the baking, mix 1 T. of the melted butter with 1/2 c. honey and drizzle over the bread. Can add nutmeg if you like. Don’t overbake. Serves with either ice cream or

“Loaded Sweet Potatoes”

4 sweet potatoes, scrubbed
1/4 c. butter, melted
1/4 c. brown sugar, packed
1 tsp. cinnamon
1/2 tsp. vanilla
1/4 tsp. nutmeg
mini marshmallows

Preheat oven to 425. Line a baking sheet with foil. Place potatoes in single layer on sheet. Place in oven and bake for 45-60 minutes or until soft. In a small bowl, wisk together butter, brown sugar, cinnamon, vanilla, and nutmeg. Cut potatoes down the center lengthwise. Top with the butter mixture and marshmallows. Preheat oven on broil. Place potatoes in oven again and broil until marshmallows start to brown.

“Fresh Apple Fritters”

1 c. milk
1 egg beaten
4 T. margarine, melted
1/2 c. sugar
1/2 tsp. salt
1/4 c. orange juice
1 c. chopped apples
3 c. flour
2 tsp. baking powder
1 tsp. vanilla
cinnamon (optional)

In a medium bowl, combine milk, egg, and melted margarine. Add orange juice, apples, and vanilla. Sift dry ingredients. Stir into milk mixture with spoon until blended. Do not over mix. Heat oil to 350. Drop into oil by tablespoonfuls. Fry until golden brown on both sides. Drain. Roll in powdered sugar or glaze. (fritters usually roll over in oil when first side is done)
