-need a recipe for fruit cake

“White Fruit Cake”

1 1/2 c. red candied cherries, chopped
2 c. candied pineapples, chopped
4 c. chopped pecans
1 3/4 c. flour, divided
1 c. oleo or butter
1 c. sugar
1 T. lemon extract
1 T. vanilla extract
1/2 tsp. baking powder
5 eggs

Combine the cherries, pineapples and pecans and 1/4 c. flour. Set aside. Beat butter and sugar until light and fluffy. Put in the extracts. Add eggs, 1 at a time, and beat well. In remaining flour, add 1/2 tsp. baking powder. Beat until well combined. In a greased 10 inch tube pan, fold in fruit, pour the mixture in and bake at 300 1 and 1/2 hours or until toothpick comes out clean. Remove and wrap tightly in a plastic wrap. Can refrigerate 2-3 days or can freeze it. Prepare in a well greased loaf pan. It’s won’t rise much, so fill almost to the top.

“Pumpkin Pie with Eagle Brand”

1, 15 oz. can pumpkin
1, 14 oz. can Eagle brand condensed milk
2 eggs
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. salt

Preheat oven to 425. Whisk the pumpkin, Eagle brand milk, eggs, spices and salt in a medium bowl until smooth and pour into crust. Bake for 15 minutes. Reduce oven to 350 and continue baking 35 to 40 minutes until knife comes out clean.
