Best Truman’s Ozark Pudding

1 egg
3/4 cup sugar
2 tablespoons flour
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped, peeled apples
1/2 cup chopped nuts
1 teaspoon vanilla
whipped cream with a little touch rum

Beat egg and sugar together until smooth. Add flour, baking powder and salt. Blend well. Fold in apples, nuts, and vanilla. Pour into greased 10″ pie pan. Bake 30 to 35 minutes at 350°. Remove from oven. Pudding will fall, it is supposed to. Serve warm with whipped cream or ice cream.

First Lady Hillary Clinton’s Rice Bake

2 tablespoons butter
2 tablespoons chopped green pepper
2 tablespoons chopped onion
2 cups cooked and diced chicken
1 6 oz package wild rice cooked
1/2 cup mayo
1 6 oz French style green beans drained
1 can cream of celery soup
1/2 cup water chestnuts, chopped or sliced
1/4 teaspoon salt and pepper to taste
juice of a lemon
1 cup grated cheddar cheese

Saute green pepper and onion in butter, combine rest except cheese. Place in 2 quart casserole dish. Bake at 350° for 30 minutes uncovered. Top with cheese and bake 5 more minutes.

1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, chopped
3 garlic cloves, chopped
1 pound ground beef
2 tablespoons chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground oregano
1/4 teaspoon ground turmeric
1/4 teaspoon ground basil
3 tablespoons red wine vinegar
3 large tomatoes, chopped
1 (15-ounce) can red kidney beans, drained
1/2 teaspoon salt (optional)

What to Do

In a soup pot, heat oil over medium heat.
Add onion, green pepper, and garlic and saute 5 minutes, or until soft. Add beef and continue cooking 5 to 6 minutes, or until meat is browned.
Stir in remaining ingredients and bring to a boil. Reduce heat to low and simmer 20 minutes, or until tomatoes are cooked down.

Lady Bird Johnson’s Chocolate Cake

2 cups sugar
1/2 cup butter
4 squares chocolate
2 eggs
1 tablespoon vanilla
1/2 cup buttermilk
1 teaspoon baking soda
2 cups flour
1 cup boiling water (or slightly less)

Cream together sugar, butter, and chocolate. Add eggs, vanilla, buttermilk, baking soda and flour. Mix well, and add boiling water. Bake at 325° for 45 minutes.
