“Carrot and Pineapple Cake”

1 1/2 c. flour
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2/3 c. cooking oil
2 eggs
1 c. finely shredded raw carrots
1/2 c. crushed pineapple with juice
1 tsp. vanilla

In a large bowl, combine dry ingredients, add rest of ingredients and mix. Beat for 2 minutes on medium speed. Bake in greased and lightly floured 9 inch square pan at 350 for 35 minutes. Frost with following:

(icing)
3 oz. cream cheese softened
4 T. softened butter or oleo
1 tsp. vanilla
dash of salt
2 1/2 c. sifted powdered sugar
1/2 c. chopped pecans

Beat cream cheese, oleo, vanilla and salt. Gradually add powdered sugar (can use less if desired), then stir in nuts.

“Butter Icing” (for Angel Food Cake)

3 T. flour
1 c. milk
put that in a double boiler and cook until thick and let it cool
cream 1 c. sugar, 1 c. butter, 1 tsp. vanilla
add that to the cooled mixture and really beat until fluffy

“Homemade Noodles”

1 beaten egg
2 T. half and half
1/2 tsp. salt
1 c. flour

Mix egg, half and half, and salt. Add flour (or may need a little more). Roll very thin on floured surface. Let stand 30 minutes. Roll loosely and slice 1/4″ wide. Unroll, spread out and let dry for about 2 hours. Can be frozen. Makes 3 cups cooked noodles.

“Noodles”

2 egg yolks
1 tsp. shortening
2 T. cream
1 tsp. salt
1 tsp. baking powder
flour

Mix together and then add enough flour to make stiff dough. Roll, dry and cut into noodles. May substitute additional 1/2 tsp. shortening and 2 T. Milnot for the 2 T. of cream.

“Big Macs”

(sauce)
1 c. mayonnaise
1/4 c. French dressing
2 T. sweet relish
1 T. ketchup
1 tsp. white vinegar
1/4 tsp. onion powder
1/8 tsp. salt
mix it all together

Fry the hamburger (about 1 and 1/2 lbs). Add 2 tsp. worchestershire sauce and a half of yellow onion chopped and salt and pepper to taste. When hamburger is almost done, add 1/4 c. or so of dill pickles. Don’t get the pickles too soft (add near end cooking). Fry it chopped. Add the Big Mac sauce to the hamburger mixture. Heat it good on the stove and stir. Buns, cheese, lettuce and hamburger mixture.
