“Peanut Butter Fudge (microwave)”

3 c. sugar
2/3 c. evaporated milk
1/4 c. oleo
1 c. chunky peanut butter
9-10 oz. marshmallow creme
1 tsp. vanilla

Cook sugar, milk and oleo in large bowl in microwave until it boils. Stir 2 or 3 times. Cook 3 minutes longer stirring once. Stir in the rest of the ingredients and beat until well-blended. Pour into a 9 by 13 buttered pan and cool. Refrigerate. Makes 3 lbs.

“Rocky Road Clusters”

2 c. sugar
5 T. cocoa
1/2 c. margarine
1/2 tsp. vanilla
3 c. quick oats
1/2 c. chopped walnuts
1 c. miniature marshmallows
1/2 c. milk

Combine sugar and cocoa in a large saucepan. Stir in milk and add margarine. Cook over medium high heat until it comes to a rolling boil and butter melts. Stir well and let boil for about one minute. Remove from heat and stir in vanilla. Add oats and nuts, stir. Cool for 5 minutes and stir in marshmallows. Drop by spoonfuls onto waxed paper. Let sit.

“Glazed Pecans”

1 c. white sugar
1 tsp. ground cinnamon
1 tsp. salt
1 egg white
1 T. water
1 lb. pecan halves

Preheat oven 250. Mix the cinnamon, sugar and salt together in a bowl. In a separate bowl, whisk the egg whites and water together until frothy. Toss your pecans in the egg white mixture. Mix the sugar mixture into the pecan mixture until the pecans are evenly coated. Spread the coated pecans onto a baking sheet. Bake, stirring every 15 minute until the pecans are evenly browned, about 1 hour.

“Maple Walnut Divinity”

2 1/2 c. sugar
1/2 c. water
1/2 tsp. vanilla
1/2 c. Karo maple syrup
2 egg whites, well-beaten
3/4 c. walnuts

Combine sugar, syrup, and water and cook until it forms a thread. Pour half the mixture into egg whites. Put the remainder on the stove and cook to a hard ball stage. Add to egg whites and beat until it loses its gloss. Add vanilla and walnuts. Pour onto a greased pan.
