Latest recipes (July 12th)...
"Shepherd's Pie"
(one with crust, and without crust)
without crust....
1 large onion quartered and sliced
2 tbsp of butter or margarine
2 cups of diced leftover roast beef
2 cups of brown or beef gravy
1/2 cup of sliced or diced cooked carrots
1 cup of frozen peas cooked
salt and pepper to taste
1 egg yolk
2 cups of leftover mashed potatoes
Melt the butter in a heavy skillet, over medium heat; add the onions until tender; add diced beef, gravy, carrots and peas; heat through, season with salt and pepper to taste; transfer to a baking dish.
Beat the egg yolk into potatoes, spoon the potatoes over the meat and veggies; bake at 400 for about 30 minutes or until the mashed potatoes are brown and gravy is bubbly.

(Banana Cream Meringue Pie)
1/2 cup sugar
5 tbsp flour
1/2 tsp salt
2 cups milk
2 eggs separated
1 tbsp butter
1/2 tsp vanilla
3 ripe bananas, sliced
1, 9 inch baked pie shell
Combine the sugar, flour and salt into the top of a double boiler; add the milk slowly; mix thoroughly; cook over rapidly boiling water until well thickened (in bottom pan, boiling water); stir constantly.
Cook 10 minutes longer stirring occasionally over low heat; stir small amount of hot mixture into egg yolks which have been slightly beaten; pour back into hot mixture while beating; cook a minute longer. Remove from heat and add vanilla and butter and let cool.
Place sliced bananas into pie shell and cover immediately; (for the meringue) beat the 2 egg whites until stiff, adding 3 to 4 tbsp of sugar gradually; spread over the pie and bake 15 minutes at 350 degrees.
