RECIPES FROM THE KWIXLAND COOKBOOK SHOW

"Zucchini Relish"

10 cups ground zucchini
4 cups ground onions
5 tbsp pure salt (not iodized)
2 and 1/4 cups white vinegar
4 and 1/2 cups sugar
1 tbsp nutmeg
1 tbsp dry mustard
1 tbsp turmeric
1 tbsp cornstarch
1/2 tsp pepper
2 tsp celery salt
1 sweet red pepper (chopped fine)
1 sweet green pepper (chopped fine)

Put zucchini, onions, and salt in a large bowl and mix well. Let stand overnight. Drain and rinse in cold water. Drain again and put in a large kettle with remaining ingredients. Bring to a boil. Simmer uncovered, stirring occasionally, for 30 minutes. Pour into sterilized pint jars and seal.
Makes 6 to 8 pints.

"No Bake Cookies"

2 cups sugar
1/4 cup cocoa
1/2 cup milk
1 stick of butter

cook until boils, stirring, remove from heat and let cool, add....
1 tsp vanilla
and salt (just shake)
1/2 cup peanut butter
3 cups oats
mix everything together and drop on a wax-lined cookie sheet and let cool.

"Easy Pie Crust"

mix together.....
1 1/2 cup flour
2 tsp sugar
1/2 tsp salt
add...2 tbsp milk to 1/2 cup oil and then add dry ingredients. Form into a ball and press into pie pan. Form to fit by using heal of hand or fingers. Flute edges and fill shell.
Great for pies, baked or unbaked before cooking.

"Caramel Corn"

large pan bring to boil and cook for 5 minutes....
2 cups of brown sugar
2 sticks of oleo
1/2 cup of white corn syrup
1 tsp salt
remove from heat, add 1 tsp baking soda and pour over 7 1/2 quarts of popped unsalted popcorn, spread on a greased cookie sheet (may need two), and bake for an hour, at 200, stirring every 15 minutes...when done, put on wax paper, break into pieces and cool...can add peanuts

ADD MILK AND BUTTER, WHILE IT'S HOT, SHOULD SOFTEN

--froze sweet corn, in brown paper bags, left in shucks, how do you cook them? Do you thaw out??
TAKE THE SHUCKS OFF, PUT THE EARS IN COLD WATER, SETS THE PAN ON THE BURNER, BOIL 15 MINUTES
