"Japanese Fruit Pie"
1 stick butter, melted
1 cup sugar
2 beaten eggs
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped pecans
1 tsp. vinegar
1 tsp. vanilla
mix all ingredients until well blended, Pour into unbaked pie shell. Bake 40 to 45 minutes at 350.

"Fruit Cake"
made in a 9 by 5 loaf pan, lined and greased
in a bowl, put these fruit...
1 cup candy red cherries, coarsely chopped
1 cup dried apricots, chopped
1/2 cup golden raisins,
1/2 cup semi-sweet chocolate pieces
set that aside, in a large bowl with mixer
6 tbsp of butter, soft
1/4 cup sugar
1/2 cup brown sugar packed
work that
beat in 3 eggs, one at a time, til just combined
add 1/4 cup orange juice
1/2 tsp almond extract
then, in a small bowl, combine 1 cup of flour, with 1/8 tsp of salt, and 1/2 tsp of baking powder
mix and stir in to the other mixture
with a spoon, stir 1 cup of walnuts toasted and chopped and 3/4 cup of pecans and the above fruit mixture that was set aside
spoon in prepared pan
bake 300, for 1 and 1/2 hour or til wooden toothpick comes out clean
remove from pan and cool on a rack
wrap and store 8 hours or overnight before slicing
keeps well if you keep cold

"Green tomato relish"
1 quart sliced green tomatoes, and add a half cup of salt. Mix with a little water and soak overnight. Next day, grind the tomatoes (use a meat grinder)
1 quart of sliced sour pickles, cut them up
1 quart of sliced onions, grind them like the tomatoes
1 quart of chopped celery, slice that
to all of that, add 2/3rds quart vinegar, 1 quart of brown sugar, 2 tbsp of tumeric, 1/2 cup of pure horseradish (nothing with mustard in it), and red and green peppers to your taste-chop them up
put all the ingredients in a pan, together and scald, but don't boil
put in jars and seal
