Latest recipes (June 21st)...
"Mississippi Mud Cake"
(cook)
2 sticks butter
1/3 cup cocoa
1 tsp vanilla
(set aside and cool)
mix together....
4 eggs beaten
2 cups sugar
1 1/2 cups flour
1/2 cup nuts (optional)
and, add the cooled mixture
bake 25 minutes at 325; sprinkle with 16 oz marshmallows; return to oven for 5 minutes
(topping)
1 stick butter
1/2 cup cocoa
1/3 cup milk
melt butter and add rest of the ingredients; add 1 tsp vanilla; mix in 1 box of powdered sugar (3 1/2 cups); 1/2 cup nuts (optional); and spread over marshmallows

"Chicken Rice Salad"
5 chicken breasts, cooked, cooled and cubed
3 cups of conversion rice (not minute rice), cooked and cooled
4 green onions
1 can water chesnuts chopped
(mix those together)
dressing...
1 1/2 cups of Hellman's mayonnaise
1 jar of Major Greys chutnee (found at Bratchers, near bbq sauce)
1 1/2 tsp of currie
and salt to taste
(mix together and add with above)
best to sit in refrigerator overnight

"Hot Potato Salad"
10 to 12 potatoes cut, cooked and cubed
7 hard boiled eggs
1 lb of bacon fried and crumbled (save the grease)
1 jar of sliced green olives
1 lb of American cheese cubed
salt and pepper to taste
mix all together,
then add this mixture
1 to 2 heaping tbsp of Miracle Whip mayonnaise
2 tsp of the bacon drippings
put in a greased 13 by 9 baking dish
bake at 350, until cheese is bubbly, 20 to 30 minutes

"Ice Box Vegetable Salad"
1 can 16 oz cut green beans, drained
1 can 17 oz peas, drained
1 can 16 oz whole kernel corn, drained
1 jar 4 oz chopped pimentos, drained
1 cup of finely chopped celery
1 medium onion finely chopped
1 medium green pepper finely chopped
combine all ingredients in a large glass bowl,
set aside in a sauce pan, bring to a boil....
1 cup sugar
1/2 cup vinegar (white)
1/2 cup vegetable oil
1 tsp salt
1/2 tsp pepper
cool slightly, then pour over vegetables, cover and refrigerate overnight
(will keep up to a week in a covered container in frig)

a sauce or relish of East Indian origin, often compounded of both sweet and sour ingredients, as fruits and herbs, with spices and other seasoning.
