"Loaded Slice Baked Potato"

3-4 (red or white..she uses white) potatoes scrubbed clean and let dry (don't peel)
cheddar cheese
bacon bits
corn flake crumbs
stick of melted butter or margarine

Slice the potatoes about 1/4 to 1/2 inch thick, dip in melted butter and put on a greased sheet cake pan. Top with as much cheese as the slice will hold, top with bacon bits and sprinkle with corn flake crumbs. Any melted butter left, drizzle over the top of each potato slice (can melt more). Bake at 350 for about 20 minutes or until the potatoes are fork tender. Can sprinkle with seasoning.

"Red Ripe Tomato"

nice sized red ripe tomato, core it and fan it--slice from top down but not all the way and forms a cup; can use chicken salad, tuna salad or ham salad (she made bologna salad), serve with a slice of Texas toast.

"Bologna Salad"

(use chunk bologna) grind the bologna and onions, add pickle relish and Miracle Whip to moisten.

"Zucchini Bread"

3 eggs
2 cups sugar
1 cup oil
1 tsp cinammon
1 tsp salt
1 tsp vanilla
2 cups finely chopped zucchini
1 cup grated carrots
2 1/2 cups flour
1 tsp soda
(nuts and raisins if desired)

Mix in the order given, bake at 350 for 45 minutes; makes two loaves.

"Macaroni Salad"

2 cups uncooked macaroni
1 onion
3 hard boiled eggs
1 peeled cucumber
Miracle Whip

Cook the macaroni until tender and drain. Put macaroni in a bowl, add the chopped onion, chopped eggs and chopped cucumber; salt and pepper, stir in Miracle Whip, put in a tight container and refrigerate.

"7-Up Cake"

1 box lemon cake mix
4 eggs
1 10oz bottle of 7-Up
1 package lemon instant pudding
1 cup canola oil

Mix together, bake at 350 in a three layer cake pan, for 25 to 30 minutes.

(icing)
1 can crushed pineapple
3 eggs yolks
1 1/2 cup of sugar
2 tsp corn starch
1 stick of oleo or butter

Cook icing ingredients together until thick and pour hot between layers and sides.
